Role Description The Head Chef & F&B; Manager at Hotel Mae Spa will oversee all kitchen operations and food & beverage services, including menu planning, food preparation, and quality control, in a full-time, on-site capacity in Puchuncaví. This role involves leading, training, and scheduling kitchen and F&B; staff to ensure consistent service standards and adherence to food safety and hygiene regulations.
The Head
Chef & F&B; Manager will manage inventory, coordinate with suppliers, and control food and beverage costs while maintaining high culinary standards and presentation. The position also includes overseeing overall food & beverage operations and guest service across dining outlets, and collaborating with hotel and spa management to design menus and beverage offerings that align with guest preferences, seasonal ingredients, and wellness offerings, as well as supporting special events and banquets.
Qualifications
- Demonstrated expertise in culinary techniques, menu development, and food presentation, with a strong focus on quality and consistency.
- Experience managing kitchen and food & beverage operations, including staff supervision, scheduling, and performance coaching in a hospitality setting.
- Solid knowledge of food safety, sanitation standards, and compliance with local health regulations.
- Ability to manage inventory, supplier relationships, and food and beverage cost control to meet budget and sustainability goals.
- Strong organizational and time-management skills to handle multiple service periods, events, and changing guest demands.
- Effective communication and collaboration skills to work closely with front-of-house, hotel, and spa teams.
- Flexibility to work weekends, evenings, and holidays as required by hotel operations.
- Formal culinary training or equivalent professional experience in hotels, restaurants, or resorts; leadership experience as a Sous Chef, Head Chef, or F&B; Manager preferred.
